Canada Water station entrance – There’s a lift between the bus station entrance and the booking hall (or three flights of stairs: 2x12 steps down +11 steps down), but you must use three flights of stairs from the Surrey Quays Road entrance (3x12 steps down). After that you can use another lift from the booking hall to the platforms. If you want to avoid this second lift then you can use one escalator down to the London Overground platforms, or two escalators down to the Jubilee line platforms

Changing tube line at Whitechapel – You can use escalators from the Elizbeth line, and lifts from all the other platforms

Mile End station exit – You must use two flights of stairs from the platforms to the booking hall (19 steps up +4 steps up from the eastbound, and 11 steps up +12 steps up from the westbound platform). After that tou must use another two flights of stairs to the exit (15 steps up +7 steps up)

For Oyster and contactless off-peak is outside the hours of 6.30 AM-9.30 AM and 4 PM-7 PM (Mon-Fri). For travelcards it’s any time after 9.30 AM (Mon-Fri). Weekends are always classed as off-peak.
